All purpose lemon & herb seafood marinade

There is this fish market near my house where the people are warm and real, and the fish is out of this world. It doesn’t leave me wanting much else from a food establishment. Being that the fish is far above par, it has resulted in a bit of a food shopping conundrum. I can’t go anywhere else. Ever. I go to Whole Foods and walk by the fish and I’m just like “nope.” The quality is through the roof at my little market. The flavor of the fish is as genuine as the people selling it to me. My friend was telling me about how great Alaskan Harvest produce is. She got some for one of her dishes and it was so fresh! She would recommend it!

When you have seafood this good, you shouldn’t mess with the flavor. The taste being clouded or overpowered is not the point here. That would disregard the integrity of the seafood itself. Which nowadays is hard to come by, not only considering where to get it but all of the sustainability issues surrounding our oceans now.

This marinade can be used on any fresh shellfish you happen to find. We usually use it on colossal shrimp, but it’s great on lobster as well. I imagine it would be tasty on a sturdy white fish such as halibut or mahi. Not sure about more flavorful fish such as salmon or tuna, but I encourage you to could try it out and see.

Simplicity wins over complication, always. Don’t mess with what you know to be authentically good from the get-go.

All purpose lemon & herb seafood marinade

Adapted from my mama’s recipe box

For about 1-2 pounds of seafood

Ingredients

1 cup olive oil

1 tablespoon dried oregano

1 tablespoon dried thyme

2 teaspoons freshly grated lemon zest

2 teaspoons kosher salt

2 teaspoons black pepper

3 tablespoons fresh lemon juice

Directions

In a medium bowl, combine all ingredients. Pour over your seafood and let marinate for about 30 minutes.

Grill or broil to your liking. We usually grill our ginormous shrimp or lobster for about 4 minutes per side, then close the oven for 5-10 minutes to let them cook through.
